These mini cheeseburger skewers are the ultimate party plate. Transforming affordable mince into something fun and delicious for the silly season, we love these with either beef or lamb mince.

Burger sauce is a combination of tomato sauce, mayonnaise and pickle juice, however if your family or friends prefer something else - barbecue sauce is also tasty, then use your instincts and go for those.

Ingredients

Cheeseburger skewers

baby new potatoes

400g Quality Mark beef mince

4 slices tasty Cheddar cheese

cut into squares

3 leaves cos lettuces

washed and torn into bite size pieces

to serve Delmaine Round Sliced Gherkin

2 Tbsp burger sauce

Preheat the oven to 200 degrees

Boil the baby potatoes in salted water until fork tender.

Drain and lay them on a baking tray. Gently squash them with a jar and grill for 10 minutes until crunchy.

Roll out your beef mince between two sheets of baking paper until it’s an even square.

Cut into 1 inch cubes and then gently fry these in a non stick frying pan.

Flip once browned and top with a wee piece of cheese, allowing to melt before removing from the pan.

Now to assemble – grab a wee potato, dot a little burger sauce on. Top with the beef mince, a pickle round, a little cos lettuce and then finally another potato.

Skewer and repeat until you’ve got a whole tray.
